The Festival Menu: Pairing Music & Food!
Dishes Inspired By The Great Jazz and Blues clubs!
We’re offering something unique at this year’s Festival, by focusing on pairing food with music, rather than just pairing food with wine.
We worked with Chef Santiago Polo and local food entrepreneur, Michelle Cox (Eat The Street) to develop a festival menu that offered a contemporary twist on dishes served at the great jazz and blues clubs of New York, New Orleans, Paris, and Buenos Aires. Each course riffs on a city’s groove: swing, second-line, left-bank cool, Soho after-hours, porteño romance.
Santiago was born in Argentina and raised in his family’s restaurant. He trained in Buenos Aires and Paris and is now Head Chef at the Argentine Embassy in London. His cuisine is rooted in fire - Argentina’s elemental heritage - guided by contemporary European precision.
Michelle’s team - based close to Midhurst - delivers beautifully crafted dishes to events in prestigious venues across London and the South East.

Chef Santiago Polo
Born in Argentina, Santiago Polo was raised among the rhythms of a family restaurant, where the language of hospitality became second nature and the fire of the grill marked the beginning of his culinary journey. After honing his craft in Buenos Aires, he moved to Paris, spending four years refining his technique and deepening his connection to French gastronomy and its pursuit of precision and emotion.
Now based in London, Santiago serves as Head Chef for the Argentine Embassy, where he celebrates the dialogue between tradition and innovation. His cuisine is rooted in the essence of fire — a tribute to Argentina’s elemental cooking heritage — and guided by contemporary European sensibility. Every dish reflects a story of origin, transformation, and memory, bridging continents through flavor, colours and smoke.
